I know this thread is a bit old, but does come up when googling SecureBoot and iPXE...

I was playing around with vSphere Auto Deploy and found that VMware does provide a signed snponly64.efi file that does not have any scripts embedded. (Not sure how much longer they will, once I post this.) The iPXE binary was signed back in May 2017, so all the new stuff is probably missing, but it has enough features to work in my environment. I was able to deploy Windows on a VM with SecureBoot enabled - something that would previously fail quite horribly.

The TFTP files package provided by VMware contains the following, relevant files:
snponly64.efi
snponly64.efi.officialkey
snponly64.efi.testkey
snponly64.efi.vmw-hardwired
snponly64.efi.vmw-hardwired.officialkey
snponly64.efi.vmw-hardwired.testkey

The snponly64.efi.officialkey would be the one you'd want to use.
