You can find an ISC dhcpd setup for loading legacy bios and UEFI versions of iPXE at https://gist.github.com/robinsmidsrod/4008017. It does get a bit complicated, but once you've got a fully-featured iPXE binary running you can use one of the examples at http://ipxe.org/examples as a menu. UEFI environments support most of the legacy BIOS features, except sanboot and VESA framebuffer.
